It is already feeling like full-on summer here in Florida, even though we are technically still in spring, but that does not mean we have to miss out on everything this season brings. When I think of spring, I think of fresh fruits, crisp vegetables, and those light, vibrant flavors that make meals feel refreshing instead of heavy. This May,

I have strawberries on my mind, along with a growing goal to travel and experience cherry blossom season in Korea and Japan one day. I still think about my first trip to Seattle over ten years ago, when I visited the University of Washington in November and completely missed seeing the cherry blossoms at the Quad. Yikes.

So for now, I am bringing those spring vibes into my kitchen instead, and this week’s recipes are all about capturing that freshness no matter how hot it gets outside.

Did you know that strawberries are one of the only fruits with seeds on the outside, with about 200 tiny seeds on each berry? Also, remember to store them unwashed in the fridge and rinse them only right before using to keep them fresh and prevent them from getting mushy.
